Important Notes on Dough

This machine works best with freshly mixed dough (not bulk fermented). It handles up to 80% hydration dough. For dough above 65% hydration, a light coating of oil may be needed. The exact amount is important—too much or too little can affect performance.

Some trial and error may be required to find the sweet spot, but it typically produces high-quality dough balls with good surface tension.

You may need to adjust your recipe for optimal results.
